The examples you linked to are not... precisely.. ascii art. All of them just use the ibmscii block art characters. You could convert grayscale images to those easily, and I'm sure there are a bunch of programs for just that purpose out there.

Personally, even though I'm not a real ASCII artist, what I like to do is go and draw a tiny doodle (probably 40 x 40) and convert those to blocks that have screentone like this lil' fella here. ▒
