I second Layer Section. It has good music, nice transitions between levels, and overall fun gameplay.
Another nice shooter for the Saturn that perhaps wasn't among the most popular is Blast Wind:
Some more good games that you may or may not have played:
Blackthorne (SNES):
DOOM 64 (N64):
This is a different game than the classic DOOM that was ported to every system imaginable.
The Firemen (SNES):
The Ninja Warriors Again (SNES):
Sin and punishment (N64):
Vandal hearts (PSX):
Mitsume ga tooru (Famicom):
Hebereke (Famicom):

@mic: Hebereke was also released in Europe as Ufouria. Great game :)
Traps´n´Treasures (AMIGA)
I loved it back then, maybe should replay as i forgot about the actual gameplay by now. Only remember it offered a lot of stuff to find in each level, the GUI maybe shows off a bit! :)

@visy: Yup, they changed a few things, but it was mostly the same. We got both Uforia and Mr Gimmick here in Sweden. I played Mr Gimmick quite a lot as a kid because a friend of mine had it, but I never played Uforia/Hebereke until many years later. Now I own a boxed copy of Hebereke because I found it pretty cheaply when I was in Tokyo two years ago :P
Mr. Gimmick! has one of the most awesome soundtracks to ever grace the NES. Also, The Firemen received sort of a sequel on the PSone, which is also quite an underrated gem.
What? No PC Engine games?!
Cyber Core: A HuCARD shoot'em up similar to Dragon Spirit with an insect theme where power-ups turn your ship into a big-ass mutant bug.
Bazaru de Gozaru: A fun CDRom puzzle game. Unfortunately it costs a kidney.

Cannon Dancer aka Osman (Arcade)
A spiritual successor to Strider from its lead developer after he left Capcom. Features fast and frantic arcade gameplay, which unfortunately can be a tad too hard at times but the colorful and well animated graphics as well as the interesting setting (sci-fi middle east?!) make this a very underrated gem.

Solar winds, DOS 1993
I never understood what to actually do in "Solar Winds". Heh. Also that Broderbund game seems interesting. Never heard of it before?!
Startopia (PC/Windows)
Management game from former Bullfrog team, in the line of both Theme Hospital and Dungeon Keeper (yes, both!).

Quite unknown at least outside the Demoscene. Amok available for DOS and Sega Saturn. Imho a very well made Third Person action game, with great atmospheric voxel graphics.
