Based on 15 years experience in organising demoparties, I can tell you that bouncing around publically with basics like the date, location and duration of the party is probably the best thing you can do to scare away potential visitors, especially those having to travel long distances. You need to show you have concrete plans, else noone will really give a fuck. And by "concrete plans" I mean a location, a date, crew and a plan on how to run the party (compos, food/drinks, sleeping facilities, etc).
Right now, it seems to me you are just dreaming out loud. That is not a bad thing necessarily, but better do it somewhere private. Setup a mailinglist/forum/smokesigns together with (potential) fellow organisers, brainstorm for a month (or two, or three, or whatever it takes), sign contracts/make agreements/etc so you can actually guarantee the party will take place, and only then start making public announcements.
If you do all the above, you are hopefully going to end up with a nice little local demoparty with maybe 1/3 to 1/2 of the locally active demosceners showing up. If the visitors tell their friends, more people will show up the second year, and perhaps a handfull of ppl living >5000 miles away are crazy enough to plan a holiday around your event (but don't take my word for it).

talking and publically debating is nice but action and own decision is what gets things done ;)
any date will have pros and cons. some people will make it and others will not. pick one, probe the folks who are most likely to come if that is ok for them. if they say 'yeah' then settle it officially.

Get your location. Then firm up the dates. Then post EVERYWHERE and get out an invite at a big party. And have folks working on the invite yesterday, metaphorically speaking.

The party is actually being organized by the brazilian sceners. By saying this, I mean that the organization isn't centralized. Every basic thing in the party is being voted. Location, date, structure, etc...

Airplane ticket prices can easily double for the dates before the exmas and they stay high until the end of January. Last time I checked.
well, not to let cats out of bags, but it looks like they're going for after January. I was waiting for Dangaufer to say it officially, I just saw on the FB group.

Prices tend to reach the lowest level they may by 4-6 weeks in advance.
But judging from my survey of skyscanner and ITA-Matrix, that may be $900+ American, a bit less in stronger currencies.

Buying far in advance seldom helps. You can get something tasty at random, but in general it seems not to depend on advance time. Some people say that e.g. in USA price can depend not only on the date of flight, but also on the day of week when you book the tickets. Airplane tickets are black magic, it sometimes pays to give it many tries before finally making a booking.
I did a few searches. For me, it would be a flight from St.Petersburg to Sao Paulo and back. For all dates I searched for tickets on thursday -> going and nearest monday <- returning.
December (around exmas): $2217
January/February: $1429 (febrero +/- more or less the same)
March: $1263
April: $1500
