Noob demo resources

I'm looking at doing something demolike, I don't really know what because I don't know what's hard/easy, but something relatively simple if it's possible.

Could someone be nice enough to point me in the direction of some demo programming resources. :)

Processing gets another vote from me. Excellent thingy to get started on. You can get your first pixels on the screen in a few lines of code.
